roasted hosta shoots wrapped in prosciutto with garlic mustard pesto

I'm thinking a photo is definitely worth a thousand words in THIS instance.

But in case you'd like some instructions on how to make the pesto:

  1. Those hosta shoots look delicious. I was in Chicago last weekend and saw them just beginning to poke up outside my brother's apartment. Nearly snipped a couple, but wondered about the building's pesticide regimen. I made arugula pesto tonight, and yours looks so much more interesting. Great idea to include preserved lemons!

  2. Lucky for me I have a friend who sends me a box of Backyard Foraged Meyer lemons every year for my bday. What a good friend!

  3. Once again, really great video, Ellen! We have more lemons on our little meyer lemon tree and it's been hard to decide what to do with them, precious little dears. This sounds like a good use for one.

  4. Great timing for a hosta shoots post! I just 'assigned' your blog to a nursery customer shopping for an east-west shady edibles kinda garden. Looks so very yum!
